Meet the founder

Michael Dalla Libera - Founder and Chef

With 20 years of food industry experience, Michael has worked in everything from big franchises, to catering, to casual fine dining and Michelin starred restaurants. He has thrived in building out systems to make things run as efficiently as possible, while providing time for his teams to be creative and grow.

Michael worked for 4 years for Java U Catering, previously one of the largest catering companies in Montreal. During that time he attended the prestigious culinary school ITHQ in Montreal. After a stage in Italy at Enoteca Pinchiorri, he was part of the opening team for Maison Boulud at the Ritz Carlton in Montreal. He was later Chef de Cuisine at Nora Gray for just under 2 years where he continued to hone his skills in French and Italian cuisine. He than became Head Chef at Manitoba, a restaurant focused on local and wild ingredients from the forest. In just 9 months, he helped achieve a grade equal to that of Joe Beef in the inaugural Quebec edition of the Gault et Millet. From there he co-founded Dalla Rose, a premium ice cream store in St Henri. After 6 years of success, including during the pandemic, he wanted a new challenge and started Seasoned Professionals.
